Pineapple Cookies (a.k.a. Pineapple Tarts)

 

Next on my list of Chinese New Year (CNY) treats to make was Pineapple Tarts. Although Pineapple Tarts is one of my favorite cookies, I have never attempted to make it until now. After scouring the web and looking at so many Pineapple Tarts recipes, I decided to try the pastry and jam recipes from the Delicious Asian Food website. I don’t have the Pineapple Tarts cookie cutter, so I ended up putting the jam inside the pastry. The dough was fairly easy to handle and produced a tender (although not as tender as some of the ones I had eaten before but that could be due to the way I handled it) and flaky cookie. The jam was just the right combination of sweet and tart, with a hint of fragrance from the spices used. This cookie may not look like the typical Pineapple Tarts but it sure tastes like one.
